So, I had a tray of four free range chicken thighs from Aldi and wasn’t quite sure what I was going to do with them. I’ve always thought about doing a stuffed chicken especially after seeing quite a few on my Instagram feeds. However, for some reason, I’ve avoided such a recipe because I have felt like it would be something that’s hard or complicated. Well, turns out I was wrong. It’s as easy as it sounds… just stuff and cook
Pick your filling and go…
Now, all you need is just a simple food processor to make this recipe easy. Please don’t feel like you have to follow these ingredients to a tee, instead let them act as an example of what you can use for stuffing. I simply came up with this recipe by following what my taste buds wanted and then decided to write it all down. I had a little extra stuffing left over which I kept in the fridge and ended up using in a morning omelette a couple of days later..yummy! So, just roll with it!
My odd futuristic method of holding everything together…
Okay, I had no toothpicks or anything fancy on hand to hold the chicken together. So, I improvised and came up with these space age ties that I am going to use next time. Here’s how to do it: tear off a couple of inches of aluminium foil and roll it like you use to roll play-dough into a snake when you were a kid. Then take your bacon wrapped stuffed chicken and place it on top of the foil snake. Bring the two foil ends together and clasp them like a hook at the top. Sounds weird, but it worked a beauty, and my chicken didn’t look like a dart board! You can see the pic below for an idea of what I am talking about
- 4 boned free range chicken thighs
- 4 rashers of bacon
- 3/4 cup baby spinach
- 1/4 cup kale
- 4 mushrooms
- 2 handfuls of walnuts
- 1.5 tsp dried basil
- 1 crushed garlic clove
- 2 tbs olive oil
- 2 olives per chicken
- Preheat oven to 180c
- Put all stuffing ingredients into a food processor until diced evenly
- Place chicken on top of rasher of bacon and stuff it
- Roll chicken and ensure the seam is facing downward
- Wrap the bacon around the chicken and secure with toothpicks or space age ties
- Cook for 40 minutes
- Can be served on top of sweet potato mash or quinoa.
