Part of the true paleo and primal lifestyle is keeping your fruits to a minimum and only consuming seasonal fruits. Let’s say a handful or so a couple of times a week. I remember going off milk and trying coconut milk and I will admit there is a bit of a taste to get used to, but after a while I find myself craving coconut milk and there is nothing but healthy fat and goodness involved. I whipped up this dessert which requires no cooking of anything and only contains minimal fruit, although you wouldn’t think that! Give it a try and let me know how it goes :)

Ingredients
  1. 1/2 cup coconut milk (refrigerated to get the good cream on top)
  2. 4 Strawberries
  3. 6 Tbs Blueberries
  4. 6 tsp Chia Seeds
  5. Slivered Almonds / Crushed Nuts
  6. Coconut Yogurt (optional)
  7. Honey (optional)
Instructions
  1. In two glasses put 1/4 cup coconut milk in each
  2. Put 3 tsp of chia seeds in each and mix it around
  3. In a blender/food processor put in the fruit and slice and dice
  4. Distribute the fruit evenly on top of the coconut milk chia mix
  5. At this point I put a Tbs or two of coconut yogurt (optional)
  6. Sprinkle the almonds / crushed nuts on top
  7. If you are a natural sugar lover, a swirl or two of honey on top
