Wow, I am so glad that I decided to write down this recipe as I went along. I thought I would wing it and see how it went and it came out just pure gold. Luckily I have my notes to work off and give you my Paleo Chicken Paella with Quinoa and Sausage. I had a couple of free range chicken breasts in the fridge and also bought a pack of gluten-free bratwurst sausages that were clean enough! I still had some quinoa left over so I decided I was going to cook up some sort of Paella. I also wanted to do a recipe that any man can do at home and impress his wife or girlfriend and trust me guys, this meal will close the deal
Paleo Chicken Paella Process
OK, so there is no need to freak out here as there are a few steps but I will try and write them out as easily as possible and to make sure you can just go step by step. The trick in this paleo chicken paella is to not over cook the chicken and leave it dry. There will be some pan frying of the meats first and this is the process that if done properly will leave your chicken tender and delicious! To make this dish more authentic I have included Quinoa in it which believe me is so delicious and I highly recommend it, however if you are not okay with this you could always create some cauliflower rice and use that instead. So get a pot, a large frying pan that is oven ready and chopping board and let’s give this a go. I promise you that although the picture doesn’t look that impressive, the taste in this is absolutely amazing and will impress anyone.
- 2 cups Chicken Stock
- 1 can Organic Diced Tomato (400ml)
- 2 Free Range Chicken Breast cut into mini fillets
- 3-4 Sausages of choice cut into bite size pieces
- 1 diced Onion
- 2 Garlic Cloves thinly sliced
- 1 cup white Quinoa
- 2 tsp Oregano
- 1 tsp Sweet Paprika
- 1/2 tsp Smoked Paprika
- 1 thick cut Green Pepper/Capsicum
- Sprinkle Chilli Flakes
- Salt n Pepper
- Preheat oven to 180C/355F
- Pour the chicken stock and diced tomato into a saucepan and bring to a simmer (turn off when simmering)
- Marinade the chicken in olive oil, salt and pepper and cook each side for a couple of minutes until a light brown then remove from pan
- Saute the garlic and onion with some coconut oil
- Add the sausage and cook for two minutes, stirring it around
- Now the Paella Party begins! Add the chicken back in, pour in the sauce from the saucepan, the herbs and spices and the white Quinoa until simmering again
- Add the thick cut green pepper on top and pop in the oven for 30 minutes
